Umi no Chikara
ウミのチカラ
Overview
Umi no Chikara is a specialty shop for sea bream ramen and spice-based dishes, located on Kuramaebashi-dori in Taito, Taito-ku, a 7-minute walk from JR Akihabara Station. Their signature dish is the Tanrei Madai Soba (Clear Sea Bream Soba) for 1000 yen, made without chemical seasonings. It features a rich sea bream soup, simmered for a long time using domestic sea bream bones (ara-daki), and seasoned purely with natural rock salt from the Southern German Alps, creating an exceptionally simple composition. The salt, high in purity and rich in natural minerals, offers a mild yet rich flavor that perfectly complements the elegant sea bream dashi (broth). The dish is designed to deliver the sea bream's flavor directly, and a rich aroma of sea bream fills the air upon entering the shop. The noodles are medium-thick and straight, balanced harmoniously with the refined sea bream soup. Toppings include chashu (braised pork), spinach, green onions, white onions, nori (seaweed), shredded sea bream, and ajitama (seasoned egg), with grated yuzu (citrus) added as a subtle accent to enhance the sea bream's umami. On the table, "Ebi Goma Shichimi" (an original shichimi spice blend of dried shrimp and white sesame) is provided to add an accent to the simple soup during the latter half of your meal. The Aka Tantanmen (Red Tantanmen) from the sub-menu, priced at 1200 yen, stands out with its creamy umami and mild flavor profile. It's thoughtfully served with a special ladle designed to easily scoop only the ingredients. The limited Aka Ika Tsukedon (Marinated Red Squid Rice Bowl) for 500 yen is a side dish that doesn't overpower the ramen, featuring the red squid's unique sticky texture and a light seasoning. Business hours are limited: lunch only from Monday to Thursday, and lunch plus dinner on Friday and Saturday. Closed on Sundays. Please plan your visit in advance. This shop emphasizes quality ingredients: no chemical seasonings, natural rock salt, and domestic sea bream bones.
How to Order

2Purchasing meal tickets
There is a ticket vending machine at the entrance of the store; it has no photos, no English display, difficulty level 3. Purchase meal tickets first, then proceed to your seat. Signature dishes include Tanrei Madai Soba (Clear Red Sea Bream Soba) 1000 yen, Tanrei Ajitama Madai Soba (Clear Red Sea Bream Soba with Flavored Egg), Aka Tantanmen (Red Tantan Noodles) 1200 yen, and limited Aka Ika Zuke-don (Red Pickled Squid Bowl) 500 yen. For Aka Tantanmen, spiciness can be chosen from two levels: "Regular" or "Spicy." A self-service sesame grinder for ground sesame seeds is available on the table. Payment is cash only; cards, e-money, and QR code payments are not accepted.
3Seating and receiving
The compact store has counter seats only. Hand your meal ticket to the staff and you will be guided to your seat. Serving time is very fast, 1-5 minutes. Dishes are served on a silver plate with the bowl placed on top.
4Other
The signature Madai Soba uses no chemical seasonings and is an extremely simple composition, flavored only with rich red sea bream soup made by slow-cooking red sea bream bones from Japan for a long time, and natural rock salt from the Southern German Alps. The red sea bream flavor is delivered straightforwardly, and the toppings—char siu, spinach, green onions, white onions, nori seaweed, flaked red sea bream, flavored egg, and grated yuzu—are designed not to interfere with the red sea bream's umami. The "Ebi Goma Shichimi" (original seven-spice blend of dried shrimp and white sesame) on the table pairs well as an accent for the simple soup in the latter half of the meal. The Aka Tantanmen is served thoughtfully with a special spoon to scoop only the ingredients, and it is a mild-style dish where creamy umami stands out more than spiciness.
