Yakiago Shio Ramen Takahashi Ginza
焼きあご塩らー麺たかはし 銀座店
Overview
This specialty shop for Yakiago (grilled flying fish) Shio Ramen is nestled in an alley behind Ginza SIX. Established in 2014, it is the Ginza branch of a popular chain with nine stores in Kanto, ideally located just a two-minute walk from both Ginza and Higashi-Ginza stations. Open until 4:30 AM, it's a popular spot for a 'shime ramen' (a late-night ramen meal) after drinks in Ginza. The signature dish is the 'Yakiago Shio Ramen' (1,000 yen). The soup, based on roasted flying fish (yakiago) combined with sababushi (dried mackerel flakes), niboshi (dried sardines), Hidaka kombu (kelp), pork, and chicken, all harmonized with an aged 'kaeshi' (seasoning sauce), offers a complex flavor profile with an elegant richness and a sharp finish despite being salt-based. A unique and celebrated feature is the complimentary small cup of yakiago dashi (broth) served upon seating, allowing guests to savor the broth's umami before the ramen itself. The noodles are flat, short, and curly, with a chewy texture that perfectly complements this robust soup. Toppings include two types of chashu (roast pork) prepared using low-temperature cooking, thick menma (fermented bamboo shoots), iwanori (rock seaweed), and ajitama (seasoned egg). Popular variations also include Seabura Shoyu Ramen (pork back fat soy sauce ramen), Special Ramen, and the Ochazuke Set (white rice served with separate arare crackers and wasabi, and a teapot of warm ago dashi soup to pour over). Table condiments include Yuzukosho (yuzu pepper paste), Ichimi (cayenne pepper), and regular pepper, along with arare and wasabi for the Ochazuke. Yuzukosho pairs particularly well with the Shio Ramen and is recommended for a flavor change in the latter half of your meal. Paper aprons are always available. This establishment is also known for being run by a female president, fostering an atmosphere where solo female customers can feel comfortable visiting even late at night.
How to Order
1Before Entering
2-minute walk from Tokyo Metro 'Ginza' Station, also 2 minutes from Higashi-Ginza Station. It's a small shop located in an alley behind Ginza SIX, with only 11 counter seats. Open continuously from 11:00 AM to 4:30 AM. It tends to be crowded during lunch peak (around 12 PM) and late-night closing times (after 10 PM). Even late at night, around 11 PM on Saturdays, there can be a 30-minute wait.
2Purchasing Meal Tickets & Ordering
The ticket machine is located outside the shop, which can be a bit difficult on rainy days as there's no roof. The process is to buy a ticket outside, then enter. It supports foreign languages with English descriptions and photos. Choose from the signature 'Yakiago Shio Ramen' (Grilled Flying Fish Salt Ramen) (1,000 yen), 'Special Yakiago Shio Ramen' (1,440 yen), 'Seabura Shoyu Ramen' (Pork Back Fat Soy Sauce Ramen), or the 'Ochazuke Set' (with separate arare crackers and wasabi). Payment is cash only; cards, e-money, and QR code payments are not accepted.
3Seating & Receiving
There are only 11 counter seats. Staff will guide you to an empty seat, and upon seating, you'll first be served a complimentary cup of yakiago dashi (grilled flying fish broth) in a small sake cup. After savoring the pure umami of the broth, your ramen will be served in about 5 minutes. Paper aprons are always available near the entrance, so take one if needed.
4Other Notes
Yuzu Kosho (citrus chili paste), ichimi (red pepper powder), and pepper are available on the counter, along with arare crackers and wasabi for the Ochazuke. Yuzu Kosho pairs particularly well with the salt soup and is recommended for a flavor change later in the meal. If you order the Ochazuke Set, place arare and wasabi on white rice, then pour the hot dashi broth (warmed in a clay pot) over it to finish. The broth is heated with a solid fuel burner when served, allowing you to adjust the temperature yourself, which is a nice touch.
