Yokohama Ramen Medakado is an elegant shoyu ramen shop located on the 9th floor restaurant area of Yokohama Mores, just a short walk from the West Exit of Yokohama Station. Known as a branch of "Shinatobaya" produced by Ms. Shiori Sano, it features a tranquil, Japanese-modern interior. The shop is committed to using no chemical seasonings whatsoever. The signature "Shoyu Ramen" has a base of clear chicken broth, carefully prepared from Kumano Jidori and whole chickens. By using unpasteurized soy sauce, moromi, and shio koji in the tare, it achieves a delicate flavor where the umami of chicken, mellow sweetness, and deep richness from fermentation are layered. The noodles are medium-thin straight with slightly less water content, offering a smooth Shinatobaya-like mouthfeel with a subtle slipperiness on the surface and a pleasant wheat aroma. The low-temperature cooked chashu is thinly sliced yet moist and tender, elegantly garnished with thick menma tips, crisp Kujo leeks, and nori seaweed. In addition to the classic Shoyu Ramen, the menu includes Shoyu Chashu Ramen with two types of pork (pork belly and pork loin), Tsukemen with medium-thick noodles immersed in konbu water that can be enhanced with citrus juice from "Busukan", and rich spicy ramen. 1Before entering the shop
Located on the 9th floor restaurant area of Yokohama Mores, about a 2-minute walk from the West Exit of Yokohama Station. It's a compact space centered around a counter, part of the Japanese-modern floor renovated in 2024. Open continuously from 11:00 to 23:00 (last food order at 22:00), making it convenient for a late-night meal after drinks. It's usually relatively uncrowded, but on holiday afternoons, there can be a wait of about 30 minutes.
2Purchasing meal tickets / Ordering
A touch-panel ticket vending machine is located to the right of the entrance. Purchase your meal ticket here before proceeding to the counter. The vending machine has photos and accepts cash, credit cards, e-money, and QR code payments. The menu includes Shoyu Ramen, Chashu Ramen, Konbu Water Tsukemen, Rich Spicy Ramen, etc. You can choose the noodle portion size.
3Seating and pickup
Mainly a counter with 9 seats, operated by a small staff. The finished ramen is placed on a high stand on the counter, so you pick it up yourself. Service is smooth and takes only a few minutes.
4Other
The additive-free soup allows you to enjoy its delicate original flavor. Tsukemen comes with citrus juice from "Busukan" (a type of sour citrus from Shimanto) for flavor variation, adding a refreshing note. Finishing with a soup-wari (broth addition) is also recommended.

基本の醤油らぁ麺は1年ぶり2回目。肉のせご飯は初めて。1年前の醤油の方が普通とは違うもろみ感を強く感じて面白いなと思った記憶なんだけど今日はそうでもなかったかも。先月食べたランチ限定セットのブレンド醤油のスープ方が好みだな。 pic.twitter.com/DjSU3cs1F2
